Winemaking – Fermented in open stainless fermenter using natural yeast. Hand plunged twice daily for two weeks. Primary/Malo-Lactic co-fermentation with 15% carbonic maceration. Bottled unfined, unfiltered with low additions
Wine Notes – Nose of choc, cherries and raspberry. Raspberry, pomegranate,
cocoa and a tight acid line on the palate.
Alc/Vol – 12.5%
