Winemaking – Open fermentation using naturally occurring yeast, with 10%
whole bunch carbonic maceration. Basket pressed off skins after 3 weeks into
second use oak. The wine sees 10 months in barrel prior to bottling.
Wine Notes – Aromas of flat cherry cola, primary red fruits and minerality.
Juicy fruit, ripe cherry, savoury spices, stalks, charred oak, plum skin texture
on the palate. Drink now to 7 yrs.
Alc/Vol – 13.0%
