Winemaking – Open fermentation using naturally occurring yeast, about 50%
unprocessed on full stems and berries giving integrated tannin profile and rich
texture. 11 months French barrel maturation. MLF completed on skins prior to
basket pressing.
Wine Notes – Aromas of cocoa, chocolate, light violet, blueberry, blackberry
tart. Palate of juicy blackberry, ripe plum and blueberry with a structured mid
pallet and dark chocolate phenolics. Drink now to 12 yrs.
Alc/Vol – 14.5%
